  • 2 1/2 cups (315g) all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 cup (50g) sugar
  • 1/2 teaspoon salt
  • 1/2 cup (113g) cold unsalted butter, cubed
  • 3/4 cup (90g) dried cranberries
  • Zest from 1 large orange (about 1 tablespoon)
  • 3/4 cup (180ml) heavy cream, plus extra for brushing
  • 1 teaspoon vanilla extract
  • 1 cup (120g) powdered sugar
  • 12 tablespoons milk or cream

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, sugar, and salt until evenly combined.
  3. Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or two knives to cut the butter into the flour until the mixture resembles coarse crumbs with pea-sized butter pieces.
  4. Fold in the dried cranberries and orange zest.
  5. In a separate small bowl, whisk together the heavy cream and vanilla extract.
  6. Pour the cream mixture into the dry ingredients and stir gently with a spatula just until the dough comes together. Avoid overmixing.
  7. Turn the dough onto a lightly floured surface and pat into a 7-inch (18cm) circle about 1-inch (2.5cm) thick.
  8. Cut the dough into 8 equal wedges using a sharp knife or bench scraper.
  9. Transfer the wedges to the prepared baking sheet, spacing them about 2 inches apart. Brush the tops lightly with cream.
  10. Bake for 18-22 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.
  11. Remove from oven and transfer scones to a cooling rack. Let cool for 10 minutes.
  12. Whisk together powdered sugar, vanilla extract, and milk or cream until smooth and pourable. Drizzle over the cooled scones.

Notes

Keep butter cold to ensure flaky layers. Do not overmix the dough to avoid tough scones. Use a convection oven setting if available for even browning. Adjust cream or flour slightly if dough is too wet or dry. Vanilla drizzle should be thin enough to drizzle but not runny.
