A warm, comforting white chicken chili slow-cooked to tender perfection with creamy white beans and a hint of green chilies. Perfect for busy weeknights, lazy weekends, or potlucks.

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 2 (15 oz) cans white beans, drained and rinsed (cannellini or great northern beans)
  • 1 (4 oz) can diced green chilies
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • ½ tsp chili powder
  • Salt and pepper to taste
  • 8 oz cream cheese, softened
  • ½ cup sour cream or Greek yogurt

Instructions

  1. Finely chop the onion and mince the garlic. Drain and rinse the white beans.
  2. Place chicken breasts at the bottom of the crockpot. Sprinkle with cumin, oregano, chili powder, salt, and pepper. Add chopped onion, minced garlic, drained beans, and diced green chilies on top.
  3. Pour in the chicken broth, ensuring it evenly covers the ingredients.
  4. Cook on low for 4 to 6 hours or on high for 2 to 3 hours until chicken is tender and easily shredded.
  5. About 30 minutes before serving, remove chicken and shred with two forks. Return shredded chicken to the crockpot.
  6. Use an immersion blender to puree about 1-2 cups of chili for creaminess, then stir it back in.
  7. Stir softened cream cheese and sour cream into the chili until fully incorporated. Cook for another 10 minutes with the lid on.
  8. Taste and adjust seasoning with salt, pepper, or a squeeze of lime juice.
  9. Serve hot, garnished with optional toppings like shredded cheese, cilantro, avocado, jalapeños, and lime wedges.

Notes

If you don’t have an immersion blender, use a regular blender or food processor to puree part of the chili. For dairy-free options, substitute cream cheese and sour cream with coconut cream or cashew cream. Adjust cooking time if using frozen chicken by adding 1-2 hours on low. Keep an eye on liquid levels and add broth or water if chili becomes too thick.
