  • 12 ounces Guinness stout
  • 2 cups beef broth, preferably low sodium
  • 3 medium carrots, peeled and cut into thick slices

  • 3 medium Yukon Gold or red potatoes, cut into chunks
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons fresh thyme, chopped (or 1 teaspoon dried thyme)
  • 2 bay leaves
  • 1/4 cup all-purpose flour (30g)
  • 3 tablespoons olive oil or vegetable oil
  • Salt and black pepper to taste

Instructions

  1. Pat beef cubes dry with paper towels. Season generously with salt and black pepper. Toss beef cubes in flour until lightly coated. Set aside.
  2. Heat olive oil in a large Dutch oven over medium-high heat. In batches, sear beef cubes for 3-4 minutes per side until browned. Remove beef and set aside.
  3. Lower heat to medium. Add diced onion to the pot and sauté for 4-5 minutes until soft and translucent. Add minced garlic and cook for 30 seconds until fragrant.
  4. Stir in tomato paste and cook for 1-2 minutes to caramelize slightly. Pour in Guinness stout, scraping up browned bits from the bottom.
  5. Return browned beef to the pot. Add beef broth and Worcestershire sauce. Stir gently to combine.
  6. Add carrots, parsnips, potatoes, fresh thyme, and bay leaves. Stir gently.
  7. Bring stew to a boil, then reduce heat to low. Cover with a tight-fitting lid and simmer gently for 2 to 2.5 hours, stirring occasionally, until beef is fork-tender and vegetables are soft but not mushy.
  8. Remove bay leaves. Taste and adjust seasoning with salt and pepper. If stew is too thin, simmer uncovered for 10-15 minutes to thicken.
  9. Serve warm, garnished with fresh thyme if desired.
