  • Freshly ground black pepper to taste
  • 1 tablespoon chopped fresh mint leaves (optional)
  • 2 tablespoons grated Parmesan cheese (optional)

Instructions

  1. Prepare the peas: shell and rinse fresh peas or thaw frozen peas under warm water for 30 seconds and pat dry. (5 minutes)
  2. Heat 1 tablespoon butter in a medium skillet over medium heat. Add shallots and garlic; sauté gently for 2-3 minutes until fragrant and translucent without browning. (3 minutes)
  3. Add peas to the pan, stir to coat with butter. Cook for 4-5 minutes, stirring occasionally, until peas are tender but still slightly crisp. (5 minutes)
  4. Lower heat to medium-low. Add remaining 2 tablespoons butter in small chunks, stirring until melted and creamy. Pour in heavy cream and stir until combined and heated through without boiling. (3 minutes)
  5. Season with salt and freshly ground black pepper. If using, add chopped mint and Parmesan cheese. Stir gently and adjust seasoning as needed. (2 minutes)
  6. Serve warm immediately for best flavor and texture.

Notes

If the sauce is too thick, add a splash more cream or reserved cooking water to loosen it. Avoid overcooking peas to maintain their bright color and slight snap. Use low heat when adding cream to prevent curdling.
