  • 1/4 cup plain full-fat Greek yogurt
  • 1/4 small red onion, thinly sliced
  • 1 tablespoon white vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon garlic powder (optional)

Instructions

  1. Wash and dry the cucumbers thoroughly. Slice them thinly about 1/8 inch thick using a sharp knife or mandoline. Place in a large bowl.
  2. Thinly slice the red onion into half-moons. If raw onion is too sharp, soak slices in cold water for 5 minutes, then drain.
  3. In a separate bowl, whisk together sour cream, Greek yogurt, white vinegar, sugar, salt, black pepper, and garlic powder until smooth and creamy. Adjust seasoning to taste.
  4. Pour the dressing over the cucumbers and onions. Add the freshly chopped dill and toss gently but thoroughly to coat evenly.
  5. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to let flavors meld and cucumbers soften slightly.
  6. Before serving, give the salad a gentle toss, taste for salt and pepper, and adjust if needed. Serve chilled.

Notes

If the salad looks watery after chilling, drain excess liquid before serving to prevent sogginess. Use English cucumbers to reduce water content. For a lighter version, swap sour cream with all Greek yogurt or use dairy-free coconut yogurt for a vegan option. Add fresh dill just before serving if preparing in advance to keep flavor vibrant.
