A nostalgic, creamy, and fluffy coleslaw recipe inspired by KFC’s classic side dish. Quick and easy to make with simple pantry ingredients, perfect for family meals and potlucks.

Ingredients

Scale
  • 1 medium head green cabbage, finely shredded (about 6 cups)
  • 2 medium carrots, peeled and finely shredded (about 1 cup)
  • 1 cup mayonnaise (recommend Hellmann’s for best creamy texture)
  • 2 tablespoons white vinegar
  • 2 tablespoons sugar (adjust to taste)
  • 2 tablespoons milk (whole or 2%, dairy-free milk as substitute)
  • 1/2 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon celery seed (optional but recommended)

Instructions

  1. Prepare the Vegetables: Rinse the cabbage thoroughly and remove any wilted outer leaves. Finely shred the cabbage using a box grater or food processor until you have about 6 cups. Transfer to a large mixing bowl.
  2. Shred the Carrots: Peel and grate the carrots finely. Add them to the bowl with the cabbage.
  3. Make the Dressing: In a separate bowl, combine mayonnaise, white vinegar, sugar, milk, salt, onion powder, black pepper, and celery seed if using. Whisk until sugar dissolves and dressing is smooth and slightly thick but pourable.
  4. Combine and Toss: Pour the dressing over the shredded veggies. Gently fold everything together with a spatula or wooden spoon until cabbage and carrots are evenly coated and mixture looks creamy and fluffy, not soggy.
  5. Chill: Cover the bowl tightly with plastic wrap or transfer coleslaw to an airtight container. Refrigerate for at least 2 hours, preferably overnight to let flavors meld and cabbage soften.
  6. Final Stir & Serve: Before serving, gently stir coleslaw to redistribute dressing. Taste and adjust salt or sugar if needed. Drain any excess liquid if coleslaw seems watery.

Notes

Finely shred cabbage and carrots for best fluffy texture. Chill coleslaw overnight for flavors to meld and cabbage to soften. Drain excess liquid before serving to avoid sogginess. Adjust sugar and vinegar to balance sweetness and tang. Fresh ingredients preferred over pre-shredded.
