Instructions

  1. Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted unsalted butter, and granulated sugar. Stir until crumbs are evenly coated and mixture resembles wet sand.
  2. Press mixture firmly into the bottom of a 9×9 inch baking dish, making sure it is even and packed tight. Bake for 8-10 minutes until golden and fragrant. Remove and let cool completely before adding filling.
  3. In a large bowl, beat softened cream cheese with powdered sugar until smooth and fluffy (about 2-3 minutes). Add well-drained cottage cheese and mix until fully blended.
  4. In a separate chilled bowl, whip heavy cream to stiff peaks. Gently fold whipped cream into the cream cheese mixture, being careful not to deflate the airiness.
  5. Stir in fresh lemon juice and lemon zest. Taste and adjust lemon juice if desired for more zestiness.
  6. Spread lemon filling evenly over the cooled crust. Smooth the top with a spatula.
  7. Refrigerate dessert for at least 3 hours or overnight to let flavors meld and filling set.
  8. Before serving, top with a generous layer of whipped cream or cool whip. Garnish with extra lemon zest or thin lemon slices if desired.
