  • 1/2 cup (115 g) unsalted butter, softened
  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • 1 teaspoon fresh thyme leaves, chopped
  • Pinch of salt and black pepper
  • Optional garnish: extra chopped herbs and a light drizzle of olive oil

Instructions

  1. Prepare the beet puree by roasting or boiling fresh beets until tender (about 30-40 minutes), then peel and puree about 1/4 cup (60 ml). Allow to cool.
  2. In a medium bowl, combine softened cream cheese, beet puree, minced garlic, and grated Parmesan cheese. Mix well until smooth and evenly pink.
  3. In a small bowl, mix softened butter with chopped parsley, chives, thyme, and a pinch of salt and pepper until evenly combined.
  4. Slice the baguette lengthwise into two equal halves using a serrated knife. For pull-apart style, do not slice all the way through.
  5. Generously spread the fresh herb butter over the cut sides of the bread.
  6. Spoon the creamy pink garlic mixture evenly over the herb butter layer, spreading gently but thoroughly.
  7. Preheat oven to 375°F (190°C). Place bread halves on a parchment-lined baking sheet and bake for 12-15 minutes until edges are golden and cheese mixture is bubbling.
  8. Optional: Broil the bread for 1-2 minutes for a golden, slightly crispy top, watching carefully to avoid burning.
  9. Remove from oven and let cool for 3-5 minutes. Garnish with extra fresh herbs and a light drizzle of olive oil if desired. Slice and serve.
