  • 3 garlic cloves, minced
  • 1 ½ cups (360 ml) heavy cream
  • 1 ½ cups (150 g) freshly grated Parmesan cheese
  • Salt, to taste
  • ½ teaspoon freshly ground black pepper, plus extra for serving
  • Chopped fresh parsley, for garnish (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add 12 oz (340 g) of fettuccine and cook according to package directions until al dente, about 10-12 minutes. Stir occasionally to prevent sticking. Drain and set aside, reserving about ½ cup (120 ml) of pasta water.
  2. While pasta cooks, melt 6 tablespoons (85 g) of unsalted butter in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant but not browned.
  3. Slowly pour 1 ½ cups (360 ml) of heavy cream into the skillet. Stir to combine and bring to a gentle simmer. Cook for 3-4 minutes, stirring occasionally, until slightly thickened.
  4. Reduce heat to low. Gradually whisk in 1 ½ cups (150 g) of freshly grated Parmesan cheese until melted and smooth. Avoid high heat to prevent clumping.
  5. Add ½ teaspoon freshly ground black pepper and salt to taste. Adjust seasoning as needed. If sauce is too thick, stir in reserved pasta water a tablespoon at a time until desired consistency is reached.
  6. Add drained fettuccine to the skillet and toss gently until pasta is evenly coated with sauce. If skillet is too small, combine pasta and sauce in the pasta pot.
  7. Serve immediately, garnished with chopped fresh parsley and extra black pepper if desired.

Notes

Use fresh Parmesan cheese for best melting and flavor. Keep heat low to prevent sauce from separating or clumping. Reserve pasta water to adjust sauce consistency. Serve immediately as sauce thickens upon cooling. For dairy-free or gluten-free versions, substitute ingredients as suggested.
