  • 10 oz frozen chopped spinach, thawed and squeezed dry
  • 14 oz canned artichoke hearts, drained and chopped
  • 8 oz cream cheese, softened (full-fat recommended)
  • 1/2 cup sour cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp crushed red pepper flakes (optional)
  • 1 large round rustic bread loaf (1012 oz)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut off the top of the rustic bread loaf about 2 inches from the top and hollow out the inside, leaving about a 1-inch thick wall all around. Save the bread chunks for dipping.
  3. Drain and squeeze dry the thawed spinach. Chop the artichoke hearts into bite-sized pieces.
  4. In a medium bowl, combine softened cream cheese, sour cream, minced garlic, salt, and pepper. Stir until smooth and creamy.
  5. Fold in Parmesan, mozzarella, chopped artichokes, and spinach. Mix gently but thoroughly.
  6. Spoon the mixture into the hollowed-out bread bowl, packing it in but not overflowing.
  7. Place the filled bread bowl on a baking sheet and bake uncovered for 25-30 minutes until bubbly and golden brown on top.
  8. Let the dip rest for 5 minutes before serving to thicken.
  9. Serve the bread bowl on a platter surrounded by reserved bread chunks and your favorite dippers.

Notes

Drain spinach thoroughly to avoid watery dip. Use room temperature cream cheese for smooth mixing. Tent bread bowl with foil if crust browns too fast. Fresh garlic and good-quality Parmesan enhance flavor. Do not overfill bread bowl to prevent spilling.
