Instructions

  1. Wash, hull, and chop about 1½ cups (225g) of fresh strawberries. For ultra-smooth butter, pulse them a few times in a food processor or blender until finely chopped but not pureed.
  2. Make sure your unsalted butter is at room temperature—soft but not melted. Cut into cubes and let sit for 15 minutes if needed to soften faster.
  3. In a mixing bowl, beat ½ cup (115g) softened butter with ½ cup (60g) powdered sugar using a hand mixer or stand mixer on medium speed. Whip for about 3-4 minutes until light, fluffy, and slightly pale in color.
  4. Gently fold in the chopped or processed strawberries, 1 teaspoon vanilla extract, the finely grated zest of 1 lemon, and a pinch of sea salt. Mix until evenly distributed but do not overmix.
  5. Taste the strawberry butter and stir in 1 tablespoon of strawberry jam or preserves if a sweeter or more berry-forward flavor is desired.
  6. Transfer the strawberry butter to a clean jar or airtight container and chill in the refrigerator for at least 1 hour to let flavors meld and butter firm up slightly.
  7. Serve by spreading on warm toast, muffins, or pancakes. Let sit at room temperature for 10 minutes if too firm.
