  • 6 to 8 strips thick-cut bacon
  • 2 large garlic cloves, minced
  • 1 tablespoon olive oil (or reserved bacon fat)
  • Salt to taste
  • ½ teaspoon freshly ground black pepper
  • Pinch of red pepper flakes (optional)
  • 1 teaspoon fresh lemon juice (optional)

Instructions

  1. Trim and wash the green beans, then pat dry thoroughly.
  2. Place bacon strips in a cold large skillet and cook over medium heat for 8-10 minutes, turning occasionally, until crispy. Remove bacon and drain on paper towels, leaving bacon fat in the pan.
  3. Add 1 tablespoon olive oil to the bacon fat and sauté minced garlic for 30 seconds to 1 minute until fragrant, being careful not to burn.
  4. Add green beans to the skillet and toss to coat with bacon fat and garlic oil. Cook on medium heat, stirring occasionally, for 8-10 minutes until beans are tender but still crisp.
  5. Season with salt, black pepper, and optional red pepper flakes. Stir well.
  6. Crumble the crispy bacon and toss into the skillet with the green beans. Stir to combine.
  7. Drizzle fresh lemon juice over the dish if using, toss once more, and remove from heat.
  8. Serve immediately for best texture and flavor.
