Crispy Bacon-Wrapped Dates

A quick and easy appetizer featuring sweet Medjool dates stuffed with creamy cheese and fresh herbs, wrapped in crispy bacon for a perfect sweet and savory bite.

Ingredients

  • Medjool dates – pitted, large size preferred
  • Bacon slices – thin-cut
  • Fresh herbs – parsley and thyme, finely chopped
  • Soft cheese – cream cheese or goat cheese (optional)
  • Toothpicks
  • Black pepper – freshly ground, a pinch
  • Olive oil – for brushing

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil. Place a wire rack inside the sheet if available.
  2. Make a small slit lengthwise in each pitted date to create a pocket.
  3. In a small bowl, mix cream cheese or goat cheese with chopped parsley, thyme, and a pinch of black pepper.
  4. Stuff each date with about 1 teaspoon of the cheese mixture, or skip if preferred plain.
  5. Cut each bacon slice in half or thirds for smaller dates. Wrap each stuffed date with one piece of bacon, securing with a toothpick.
  6. Lightly brush the bacon-wrapped dates with olive oil.
  7. Place dates on the wire rack or directly on the lined baking sheet. Bake for 20–25 minutes, turning halfway through, until bacon is crispy and caramelized but not burnt.
  8. Remove from oven and immediately sprinkle with more fresh chopped herbs. Let cool for about 5 minutes before serving.

Notes

Use thin-cut bacon for faster crisping. Soak toothpicks in water for 10 minutes before use to prevent burning. For extra crispiness, broil for 1–2 minutes at the end, watching carefully. Can be prepared a day ahead by stuffing and refrigerating, then wrapping and baking before serving. Avoid microwave reheating to keep crispiness.
