A quick and easy recipe for juicy smashed patties with crispy, caramelized edges cooked on a Blackstone griddle. Perfect for family gatherings and casual cookouts.

  • 1 pound (450g) ground beef (80/20 blend)
  • Kosher salt
  • Freshly ground black pepper
  • Cheese slices (American or sharp cheddar)
  • Soft burger buns (brioche or potato buns)
  • Butter or oil (unsalted butter preferred)
  • Optional toppings: thinly sliced onions (raw or caramelized), pickles, lettuce, tomato slices, ketchup, mustard

Instructions

  1. Preheat your Blackstone griddle to medium-high heat (about 400°F / 200°C) and let it get hot (5-7 minutes).
  2. Divide the ground beef into 4-ounce (115g) loose balls without compacting.
  3. Lightly grease the griddle with butter or oil.
  4. Place beef balls spaced apart on the griddle.
  5. Smash each ball firmly with a spatula or burger press until about 1/4 inch (6mm) thick, holding pressure for 10-15 seconds to form a crust.
  6. Season patties immediately with kosher salt and freshly ground black pepper.
  7. Cook patties undisturbed for 2-3 minutes until edges are deep brown and crispy.
  8. Flip patties carefully and add a slice of cheese to each.
  9. Cook for another 1-2 minutes until cheese melts.
  10. Butter the buns lightly and toast face-down on the griddle for 1-2 minutes until golden brown.
  11. Assemble burgers by placing patties on buns and adding preferred toppings and condiments.
  12. Serve immediately while hot and juicy.

Notes

Use fresh, cold ground beef for best results. Do not flip patties more than once and avoid pressing down after flipping to keep them juicy. Wipe griddle between batches to avoid burnt bits. Butter buns before toasting for extra flavor. For gluten-free option, use gluten-free buns or lettuce wraps.
