  • 2 cups cooked chicken breast, shredded or chopped
  • 1/2 cup Frank’s RedHot Sauce
  • 2 tablespoons unsalted butter, melted

  • 1/4 cup mayonnaise
  • 2 tablespoons sour cream or Greek yogurt
  • 1 tablespoon lemon juice
  • Salt and freshly ground black pepper to taste
  • 1/2 cup finely chopped celery
  • Optional garnishes: sliced green onions, chopped fresh parsley, extra blue cheese crumbles

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a medium bowl, mix the shredded chicken with buffalo sauce and melted butter until evenly coated. Set aside.
  3. In a separate bowl, stir together blue cheese crumbles, mayonnaise, sour cream, and lemon juice. Season with salt and pepper. Add a teaspoon of water or milk if the sauce is too thick.
  4. Place flatbreads on a baking sheet lined with parchment paper. Prick the surface lightly with a fork to prevent bubbling.
  5. Bake the flatbreads for about 5 minutes to start crisping the base.
  6. Remove flatbreads from oven. Evenly spread the buffalo chicken mixture over each flatbread, then scatter chopped celery on top.
  7. Return the flatbreads to the oven and bake for another 8-10 minutes, or until edges are golden and chicken is heated through.
  8. Remove from oven and drizzle with the creamy blue cheese sauce. Add optional garnishes like green onions or extra blue cheese crumbles.
  9. Slice into wedges and serve immediately.

Do not overload the flatbread to keep it crispy. Use room temperature ingredients for better blending and cooking. Prick flatbread before baking to prevent bubbles. Watch oven closely to avoid burning. Let flatbread cool slightly before slicing. For extra crispiness, broil 1-2 minutes at the end.
