Instructions

  1. Place 6 large eggs in a saucepan and cover with cold water about an inch above the eggs. Bring to a boil over medium-high heat. Once boiling, cover the pan, turn off the heat, and let the eggs sit for 12 minutes.
  2. Transfer eggs to a bowl of ice water for 5 minutes to cool completely. Gently tap each egg on the counter and peel the shells off. Rinse to remove any shell bits.
  3. While eggs are boiling, cook 3 slices of thick-cut bacon in a skillet over medium heat until crispy, about 8 minutes, turning occasionally. Transfer to paper towels to drain and crumble once cool.
  4. Slice peeled eggs in half lengthwise and carefully scoop out yolks into a mixing bowl. Mash yolks with a fork until crumbly.
  5. Mix in 3 tablespoons mayonnaise, 1 teaspoon Dijon mustard, and 1 teaspoon white vinegar. Stir until smooth and creamy. Season with salt and freshly ground black pepper to taste.
  6. Stir in 1 tablespoon finely chopped fresh chives into the yolk mixture, reserving the rest for garnish.
  7. Spoon or pipe the yolk mixture evenly into the hollowed egg whites. Don’t overfill, but be generous.
  8. Optional: Heat a non-stick skillet over medium heat. Place filled eggs yolk-side down and cook for 1-2 minutes until the bottoms are lightly golden and crisp.
  9. Sprinkle crumbled bacon, remaining chives, and a dash of paprika on top. Serve immediately or chill until ready.
