  • Pinch of salt (optional)
  • Non-stick cooking spray or parchment paper for greasing the pan (optional)

Instructions

  1. Grease a 9×13-inch baking pan with non-stick cooking spray or line it with parchment paper and set aside.
  2. In a large saucepan over low heat, melt 3 tablespoons of unsalted butter, about 2-3 minutes, without browning.
  3. Gradually add 4 cups of mini marshmallows to the melted butter, stirring continuously with a rubber spatula or wooden spoon until completely melted and smooth, about 5-7 minutes.
  4. Remove the pan from heat and stir in 1 teaspoon vanilla extract and a pinch of salt.
  5. Immediately add 6 cups of Rice Krispies cereal to the marshmallow mixture and stir gently but thoroughly until evenly coated.
  6. Fold in 2 cups of Lucky Charms cereal, including the marshmallows, gently to keep marshmallows intact.
  7. Transfer the mixture into the prepared pan and press evenly and firmly into a 1 to 1.5 inch thick layer using a buttered spatula or wax paper. Avoid pressing too hard.
  8. Let the treats cool at room temperature for at least 1 hour to firm up, or refrigerate for 30 minutes to speed up setting.
  9. Once set, cut into 12-16 squares using a sharp knife, wiping the blade clean between cuts for neat edges.
  10. Serve fresh for best texture.
