A quick and easy appetizer featuring tender asparagus wrapped in crispy prosciutto, perfect for entertaining or a savory snack.

Ingredients

  • Fresh asparagus spears (about 6 inches long, thin to medium thickness)
  • Prosciutto slices (1 slice per asparagus spear)
  • Extra virgin olive oil (about 1 teaspoon)
  • Freshly ground black pepper
  • Lemon zest (optional)
  • Garlic powder (a pinch, optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper or a silicone baking mat.
  2. Trim the asparagus by snapping off the woody ends to leave about 5-6 inches of tender stalk.
  3. Pat dry the asparagus to remove any moisture.
  4. Lay one slice of prosciutto flat. Place a single spear of asparagus at one end and roll it tightly until the whole spear is wrapped.
  5. Arrange the wrapped spears seam side down on the baking sheet.
  6. Drizzle lightly with olive oil (about 1 teaspoon) and sprinkle a pinch of garlic powder and freshly ground black pepper on top.
  7. Bake for 12-15 minutes until the prosciutto is golden and crisp and the asparagus is tender but still slightly firm.
  8. Remove from oven and zest a lemon over the bites.
  9. Let cool for 2 minutes to crisp up further.
  10. Serve warm or at room temperature.

Notes

Rotate the pan halfway through baking for even crisping. Tent with foil if prosciutto crisps too quickly before asparagus is tender. Avoid microwaving leftovers to keep prosciutto crispy. Use thin to medium asparagus for best results. Can substitute prosciutto with bacon, pancetta, or grilled eggplant for vegan option.
