These crispy prosciutto-wrapped asparagus bites are a quick and easy appetizer featuring tender asparagus wrapped in salty prosciutto, roasted to perfection, and finished with a tangy balsamic glaze.

  • 1 pound fresh asparagus spears, trimmed
  • 8 to 10 thin slices prosciutto
  • 1 tablespoon extra virgin olive oil
  • Pinch of kosher salt
  • Freshly ground black pepper, to taste
  • 2 tablespoons balsamic glaze (store-bought or homemade)
  • Optional: lemon zest from one lemon

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Trim the asparagus by snapping off the tough woody ends near the base.
  3. Slice each prosciutto slice in half lengthwise if wide.
  4. Wrap each asparagus spear with a prosciutto strip spirally, overlapping slightly but not bunching.
  5. Place wrapped spears on a baking sheet lined with parchment paper or silicone mat, spaced apart.
  6. Drizzle about 1 tablespoon olive oil over the asparagus bundles and season lightly with salt and freshly ground black pepper.
  7. Roast in the oven for 20 to 25 minutes, turning once halfway through, until prosciutto is deep golden and asparagus is tender but not mushy. Check at 18 minutes if asparagus is thin.
  8. If making homemade balsamic glaze, simmer ½ cup (120 ml) balsamic vinegar over medium heat until thickened to syrupy consistency, about 10-15 minutes.
  9. Arrange the crispy prosciutto-wrapped asparagus bites on a serving platter and drizzle with balsamic glaze.
  10. Optionally, grate fresh lemon zest over the top before serving.

Notes

If prosciutto browns too fast, tent loosely with foil to finish roasting. Use medium-thickness asparagus for best texture. Homemade balsamic glaze is easy to make but watch carefully to avoid burning. For reheating leftovers, warm in a 350°F oven for 5-7 minutes to maintain crispiness. Avoid microwaving.
