Crispy sesame balls with a crunchy golden exterior and a warm, silky sweet red bean paste filling. This easy homemade treat is perfect for parties, snacks, or nostalgic comfort food.

  • 1 cup (150g) glutinous rice flour
  • 3/4 cup (180ml) warm water
  • 2 tablespoons (25g) sugar
  • 1 tablespoon (15ml) vegetable oil
  • 1 cup (200g) sweet red bean paste (anko), smooth or chunky
  • 1/2 cup (75g) white sesame seeds, lightly toasted
  • Vegetable oil for deep frying (about 3-4 cups / 700-900ml)

Instructions

  1. In a mixing bowl, combine 1 cup (150g) glutinous rice flour and 2 tablespoons (25g) sugar.
  2. Gradually add 3/4 cup (180ml) warm water while stirring until a sticky dough forms.
  3. Add 1 tablespoon (15ml) vegetable oil and knead gently until smooth and elastic, about 5 minutes.
  4. Pinch off golf-ball-sized pieces (about 1.5 inches / 4cm diameter) and roll into smooth balls. Cover with a damp cloth.
  5. Scoop about 1 tablespoon (15g) sweet red bean paste for each ball and roll into small balls.
  6. Flatten a dough ball into a 3-inch (7cm) disc, place a red bean paste ball in the center, wrap dough around filling, seal edges, and roll into a smooth ball.
  7. Lightly toast 1/2 cup (75g) sesame seeds in a dry pan over medium heat until golden and fragrant, about 2-3 minutes.
  8. Roll each filled dough ball in toasted sesame seeds, pressing lightly to stick evenly.
  9. Heat vegetable oil in a deep fryer or heavy pot to 320°F (160°C), about 3 inches (7.5 cm) deep.
  10. Fry sesame balls in batches for 6-8 minutes, turning occasionally until evenly golden and puffed.
  11. Remove with a slotted spoon and drain on a cooling rack or paper towels. Let cool slightly before serving.

Notes

Maintain oil temperature at 320°F (160°C) for even cooking and puffing. Seal dough edges well to prevent filling leakage. Toast sesame seeds before coating for best flavor. Dough should be soft and pliable, not dry or crumbly. Fry in batches to avoid overcrowding and temperature drop.
