  • 3 cups (450g) mixed raw nuts (almonds, cashews, pecans, walnuts)
  • 3 tablespoons honey (local wildflower honey preferred)
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a small bowl, whisk together brown sugar, cinnamon, nutmeg, ground ginger, ground cloves, and salt. Set aside.
  3. In a medium bowl, combine the raw mixed nuts. Pour in melted butter, honey, and vanilla extract. Stir well until every nut is coated.
  4. Sprinkle the spice mix over the honey-coated nuts and fold gently but thoroughly to distribute evenly.
  5. Line a baking sheet with parchment paper and spread the nuts out in a single layer.
  6. Roast for 20-25 minutes, stirring every 7-8 minutes to prevent burning and promote even roasting.
  7. Remove from oven and let cool completely on the baking sheet to crisp up.
  8. Once cooled, transfer to an airtight container or serve immediately.

Notes

Stir nuts every 7-8 minutes during roasting to avoid burning. Use room temperature butter and honey for even coating. For vegan option, substitute butter with coconut oil and honey with maple syrup. To re-crisp nuts, warm in a 300°F oven for 5-7 minutes. Avoid freezing to maintain texture.
