  • 1 tbsp tomato paste
  • 1/4 cup water
  • Individual chip bags (Fritos, Doritos, or favorite corn chips)
  • 1 cup shredded lettuce
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup diced tomatoes
  • Sour cream (optional, for topping)
  • Green onions or cilantro, finely chopped (optional)
  • Jalapeños, sliced (optional)

Instructions

  1. Prepare your ingredients: finely chop onion and garlic, shred lettuce and cheese, dice tomatoes, and slice jalapeños if using. Set toppings aside in separate bowls.
  2. Heat a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a wooden spoon, until browned (about 5 minutes). Drain excess fat if needed.
  3. Add chopped onions and minced garlic to the skillet. Cook until onions soften and become translucent, about 2-3 minutes.
  4. Sprinkle in taco seasoning, add tomato paste and water. Stir well to coat the meat evenly.
  5. Reduce heat to medium-low and simmer the mixture for about 5 minutes until thickened and flavorful, stirring occasionally. Add more water if it looks dry.
  6. Carefully open individual chip bags without tearing. Spoon a generous amount of the beef mixture into each bag.
  7. Top with shredded lettuce, cheese, diced tomatoes, sour cream, and green onions or cilantro.
  8. Serve immediately with small forks or spoons for easy eating.

Notes

Do not overcook the meat to keep it juicy. Assemble tacos just before serving to keep chips crunchy. Customize seasoning to taste and add lime juice for brightness.
