  • 2 cups (250 g) all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 cup (50 g) granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup (115 g) cold unsalted butter, cubed
  • 1 large egg, room temperature
  • 3/4 cup (180 ml) whole milk (or almond/oat milk for dairy-free)
  • Zest of 2 medium lemons
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, sugar, and salt.
  3. Add the cold, cubed butter to the dry ingredients. Cut the butter into the flour using a pastry cutter or fingers until the mixture resembles coarse crumbs with pea-sized pieces. Keep the butter cold.
  4. In a separate bowl, whisk together the egg, milk, lemon juice, vanilla extract, and lemon zest.
  5. Pour the wet ingredients into the dry mixture. Gently fold with a spatula or wooden spoon until just combined. Do not overmix.
  6. Turn the dough onto a lightly floured surface and pat into a 1-inch thick circle about 7 inches wide.
  7. Cut the circle into 8 wedges using a sharp knife or bench scraper.
  8. Transfer the wedges to the prepared baking sheet, spacing them apart.
  9. Bake for 15-18 minutes until golden brown and a toothpick inserted comes out clean.
  10. Cool the scones on a wire rack for at least 10 minutes before serving.

Notes

Keep butter cold to ensure fluffy, flaky scones. Do not overmix the dough to avoid toughness. If tops brown too quickly, tent with foil halfway through baking. Fresh lemon zest is preferred over bottled for best flavor. Dough can be prepared ahead and refrigerated overnight.
