Instructions

  1. In a microwave-safe mug, combine 4 tablespoons all-purpose flour, 3 tablespoons sugar, 1 tablespoon unsweetened cocoa powder, 1/4 teaspoon baking powder, a pinch of salt, and 1 tablespoon buttermilk powder. Stir well until evenly blended.
  2. Add 3 tablespoons milk, 2 tablespoons vegetable oil, 1/2 teaspoon vanilla extract, and 1 teaspoon red food coloring. Stir gently until smooth and thick with no lumps.
  3. Microwave on high for 60 to 70 seconds. The cake will rise and may look slightly wet on top.
  4. Check doneness by inserting a toothpick into the center; if it comes out mostly clean with a few moist crumbs, the cake is ready. If not, microwave for an additional 5 seconds and recheck.
  5. While the cake cooks, mix 2 tablespoons softened cream cheese, 1 tablespoon softened butter, and 2 tablespoons powdered sugar in a small bowl until smooth and creamy. Add lemon juice or cinnamon if desired.
  6. Let the cake cool for about 2 minutes, then spread the cream cheese frosting evenly on top. Serve warm.
