  • 1 cup (226 g) unsalted butter, cold and cubed
  • 68 tablespoons (90120 ml) ice-cold water
  • 5 cups (700 g) fresh fruit, sliced (apples, berries, or peaches)
  • ¾ cup (150 g) granulated sugar
  • 2 tablespoons (16 g) all-purpose flour or cornstarch
  • 1 teaspoon ground cinnamon (optional)
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 egg, beaten
  • 1 tablespoon coarse sugar (optional)

Instructions

  1. In a large bowl, whisk together 2 ½ cups (315 g) flour and 1 teaspoon salt. Add the cold, cubed butter (1 cup/226 g) and use a pastry cutter or two forks to cut the butter into the flour until pea-sized pieces remain. Work quickly to keep the butter cold.
  2. Gradually pour in 6 tablespoons (90 ml) of ice-cold water, mixing gently with a fork until the dough just begins to come together. Add more water if needed until the dough holds when squeezed but is not sticky. Avoid overworking the dough.
  3. Divide the dough into two equal discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  4. In a medium bowl, combine 5 cups (700 g) sliced fresh fruit, ¾ cup (150 g) sugar, 2 tablespoons (16 g) flour or cornstarch, 1 teaspoon cinnamon, 1 tablespoon lemon juice, and 1 teaspoon vanilla extract. Toss gently to coat evenly.
  5. On a lightly floured surface, roll out one dough disc into a 12-inch (30 cm) circle about ⅛ inch (3 mm) thick. Transfer to a 9-inch (23 cm) pie dish, pressing gently and allowing excess to hang over the edge.
  6. Pour the fruit filling into the crust, spreading evenly. Do not overfill.
  7. Roll out the second dough disc to the same size. Cover the pie with a full top crust (cut slits for steam) or create a lattice pattern. Trim excess dough and crimp edges to seal.
  8. Brush the top crust with beaten egg and sprinkle with coarse sugar if desired.
  9. Place the pie on a baking sheet and bake in a preheated 375°F (190°C) oven for 45-55 minutes, until the crust is golden and the filling bubbles. Cover edges with foil halfway through baking if browning too quickly.
  10. Let the pie cool for at least 2 hours before slicing to allow the filling to set.
