  • 3 cups shredded cooked chicken (about 400g) – rotisserie chicken recommended
  • 8 ounces cream cheese, softened (225g)
  • 1/2 cup buffalo hot sauce (120ml) – Frank’s RedHot preferred
  • 1/2 cup ranch dressing (120ml)
  • 1 cup shredded cheddar cheese (100g)
  • 1 cup shredded mozzarella cheese (100g)
  • 1/2 cup blue cheese crumbles (75g)
  • 1/4 cup sour cream (60g)
  • 2 tablespoons milk (30ml)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Freshly ground black pepper, to taste
  • Fresh parsley or chives, finely chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Shred about 3 cups (400g) of cooked chicken finely using a fork or hands.
  3. In a large bowl, combine 8 ounces (225g) softened cream cheese, 1/2 cup (120ml) buffalo hot sauce, and 1/2 cup (120ml) ranch dressing. Blend until smooth and creamy using a hand mixer or spoon.
  4. Stir in 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, and freshly ground black pepper to taste.
  5. Fold in the shredded chicken, 1 cup (100g) shredded cheddar cheese, and 1 cup (100g) shredded mozzarella cheese. Mix gently until well incorporated.
  6. Spread the mixture evenly into a 9×9-inch (23×23 cm) baking dish and smooth the top with a spatula.
  7. Bake in the preheated oven for 20-25 minutes until the dip is bubbling around the edges and cheese is melted and golden.
  8. While baking, whisk together 1/2 cup (75g) blue cheese crumbles, 1/4 cup (60g) sour cream, and 2 tablespoons (30ml) milk in a small bowl until smooth but pourable. Adjust milk for desired consistency.
  9. Remove the dip from the oven and drizzle the blue cheese mixture generously over the top.
  10. Sprinkle additional blue cheese crumbles and chopped fresh parsley or chives if desired.
  11. Serve warm with celery sticks, tortilla chips, or crusty bread.

Notes

Let cream cheese soften at room temperature for at least 30 minutes or soften in short microwave bursts to avoid lumps. Shred chicken finely but keep some texture. Adjust buffalo sauce amount to control heat level. Do not overbake to prevent drying out. Blue cheese drizzle should be thick enough to drizzle but not runny. Reheat leftovers gently and add more drizzle if desired.
