  • 1 cup (240 ml) heavy cream (or half-and-half for lighter option)
  • 1 ½ cups (170 g) shredded cheese (blend of sharp cheddar and mozzarella recommended)
  • ½ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, finely chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Cook 6 strips of bacon in a skillet over medium heat until crisp, about 8-10 minutes. Transfer to paper towels to drain, then chop into small pieces.
  3. If desired, sauté the chopped spinach in the bacon fat for 1-2 minutes until wilted; otherwise, use fresh spinach.
  4. Slice the mini bagels horizontally to create top and bottom halves. Place the bottoms on the prepared baking sheet and set the tops aside.
  5. In a large bowl, whisk together 4 large eggs and 1 cup heavy cream until fully combined and slightly frothy. Add ½ teaspoon onion powder, ¼ teaspoon garlic powder, salt, and pepper to taste.
  6. Fold in the chopped bacon, sautéed or fresh spinach, and 1 ½ cups shredded cheese. Stir gently to combine evenly.
  7. Spoon the quiche mixture generously onto each bagel bottom, distributing the filling equally without overfilling.
  8. Bake in the preheated oven for 15-18 minutes until the filling is set but tender and bagel edges are golden brown.
  9. Remove from oven and let the bites rest for 5 minutes to firm up the filling.
  10. Garnish with fresh parsley if desired and serve warm.
