Instructions

  1. Prepare the patties: In a large bowl, combine your chosen protein with the respective seasonings and binders. For beef sliders, mix ground beef with Worcestershire sauce, garlic powder, onion powder, salt, and pepper. For chicken, add soy sauce, grated ginger, garlic, and green onions. For veggie sliders, mix mushrooms, breadcrumbs, Parmesan, egg, and garlic. Mix gently until just combined.
  2. Form the patties: Divide the mixture into 8 equal portions (about 2 ounces or 55 grams each). Shape each into a small, flat patty slightly larger than your slider buns. Place patties on a plate, cover with plastic wrap, and let rest for 10 minutes.
  3. Preheat your skillet or grill pan over medium-high heat for 3-5 minutes until hot but not smoking.
  4. Cook the patties: Place patties in the pan without overcrowding. Cook beef sliders for 3-4 minutes per side for medium doneness. Chicken sliders cook 5-6 minutes per side until no longer pink. Vegetarian patties cook about 4 minutes per side until golden and firm. Avoid pressing patties while cooking.
  5. Add cheese: During the last minute of cooking, place cheese slices on each patty and cover the pan to melt the cheese.
  6. Toast the buns: Spread softened butter on the inside of buns and toast on a separate pan or in the oven at 350°F (175°C) for 3-5 minutes until golden and slightly crisp.
  7. Assemble the sliders: Spread sauce or mayo on the bottom bun, add the patty with melted cheese, layer pickles or fresh basil as desired, and top with the bun lid.
  8. Serve immediately while warm.

Notes

Do not overmix the meat mixture to avoid tough patties. Make patties slightly larger than buns as they shrink while cooking. Toast buns with butter to prevent sogginess. Use a meat thermometer to ensure safe cooking temperatures: 160°F for beef, 165°F for chicken. Keep sliders warm in a low oven (200°F) covered loosely with foil. Customize with sauces like garlic aioli or sriracha mayo for extra flavor.
