  • 6 bone-in, skin-on chicken thighs (boneless optional)
  • Juice of 2 medium lemons
  • Zest of 1 lemon
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons chopped fresh rosemary
  • 2 tablespoons chopped fresh thyme
  • 2 tablespoons chopped fresh parsley
  • 4 cloves garlic, minced
  • 1 tablespoon honey
  • 1 ½ teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • Optional: red pepper flakes

Instructions

  1. Prepare the marinade by whisking together lemon juice, lemon zest, olive oil, minced garlic, honey, chopped herbs, salt, black pepper, and optional red pepper flakes in a mixing bowl.
  2. Place chicken thighs in a large zip-top bag or airtight container and pour marinade over them. Seal and refrigerate for at least 30 minutes, up to 4 hours, flipping occasionally.
  3. Preheat grill to medium-high heat (375°F to 400°F). Clean and oil grates to prevent sticking.
  4. Grill chicken thighs skin side down for 7-10 minutes without moving to develop char. Flip and grill another 7-10 minutes until internal temperature reaches 165°F and juices run clear.
  5. Remove chicken from grill and let rest for 5 minutes to redistribute juices.
  6. Serve garnished with extra fresh herbs or lemon wedges if desired.

Notes

Marinate chicken for at least 30 minutes but no longer than 4 hours to avoid mushy texture. Use a meat thermometer to ensure chicken reaches 165°F for safe consumption. Rest chicken after grilling to keep it juicy. Avoid pressing chicken on the grill to retain juices. For flare-ups, move chicken to cooler part of grill or spritz with water.
