  • 1 can (15 oz) black beans, rinsed and drained
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup tomato sauce
  • 1 tablespoon chili powder
  • 1 teaspoon cumin, toasted if possible
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 8 large (10-inch) flour tortillas
  • 1 cup shredded cheese (cheddar or Monterey Jack), optional
  • Sour cream for serving, optional
  • Fresh cilantro, chopped, for garnish
  • Optional extras: diced jalapeños, diced tomatoes, avocado slices

Instructions

  1. Chop the onion finely, mince the garlic, and rinse the black beans under cold water. Set aside.
  2. Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a wooden spoon, until browned and no longer pink, about 6-8 minutes. Drain excess fat if needed.
  3. Push the beef to one side of the skillet. Add the chopped onion to the cleared space and cook until softened and translucent, about 3-4 minutes. Add the garlic and cook for 30 seconds until fragrant.
  4. Sprinkle in chili powder, cumin, paprika, oregano, salt, and pepper. Stir to coat the beef and onions evenly, toasting the spices in the pan.
  5. Pour in the tomato sauce and add the black beans. Stir gently and simmer on low heat for about 5 minutes to meld flavors and reduce excess liquid. Add a splash of water if too dry.
  6. Warm the tortillas in a dry skillet or microwave wrapped in a damp cloth for about 20 seconds each to make them pliable.
  7. Spoon about 1/2 cup of the beef and bean mixture onto the center of each tortilla. Sprinkle with shredded cheese and add optional toppings if desired. Fold in the sides and roll up tightly.
  8. Optional: Place burritos seam-side down in a hot skillet for 1-2 minutes per side until golden and crispy.
  9. Garnish with fresh cilantro and a dollop of sour cream. Serve warm.

Notes

Toast spices in the pan to release essential oils for better flavor. Warm tortillas properly to prevent tearing. Drain excess liquid from filling to avoid soggy burritos. For extra texture, crisp burritos in a skillet after rolling.
