  • 3 tablespoons extra virgin olive oil
  • Juice of 1 large lemon (about 3 tablespoons)
  • 4 cloves garlic, minced
  • 1 tablespoon chopped fresh oregano
  • 1 tablespoon fresh thyme leaves
  • 2 tablespoons fresh parsley
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • Optional: pinch of red pepper flakes or swap parsley with cilantro

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a medium bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, parsley, Dijon mustard, honey, salt, and pepper until fully combined.
  3. Pat the chicken thighs dry with paper towels.
  4. Place chicken thighs skin-side up in a baking dish or sheet pan. Pour the herb glaze evenly over the chicken, coating each piece well.
  5. Let the chicken marinate for 10-15 minutes at room temperature (or up to 2 hours in the fridge).
  6. Bake the chicken for 35-40 minutes until the skin is golden and crispy and the internal temperature reaches 165°F (74°C). Halfway through, baste with pan juices.
  7. Optional: For extra crispiness, broil for the last 2-3 minutes, watching closely to avoid burning.
  8. Remove from oven and let rest for 5 minutes.
  9. Serve with a drizzle of leftover glaze and sprinkle fresh parsley on top if desired.

Notes

Pat chicken dry before baking for crispy skin. Rest chicken after baking to keep it juicy. The herb glaze can be made up to 24 hours ahead and stored in the fridge. Use a meat thermometer to ensure chicken reaches 165°F (74°C). Reheat leftovers in the oven at 350°F (175°C) to maintain crispy skin.
