Ingredients

Scale
  • 3 ripe avocados, peeled and pitted
  • 1 small lime, juiced
  • 2 tablespoons fresh cilantro, chopped (optional)
  • 1/4 teaspoon salt
  • 1 small garlic clove, minced
  • 1 can (15 oz) refried beans
  • 1 teaspoon taco seasoning
  • 1 cup chunky salsa
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup sour cream (full-fat or Greek yogurt)
  • 1/2 cup sliced black olives
  • 1/2 cup chopped green onions
  • 1 medium tomato, diced

Instructions

  1. Prepare the guacamole: In a medium bowl, mash the avocados with a fork or potato masher until mostly smooth but still a bit chunky. Stir in lime juice, minced garlic, chopped cilantro, and salt. Taste and adjust seasoning if needed. This should take about 5 minutes.
  2. Season the refried beans: In a separate bowl, mix the refried beans with taco seasoning until well combined. Set aside.
  3. Layer the dip: Spread the seasoned refried beans evenly in the bottom of your serving dish.
  4. Add the sour cream layer: Spoon the sour cream on top of the beans, spreading gently but evenly to cover the beans completely.
  5. Add the guacamole: Carefully spread the fresh guacamole over the sour cream. Chill for 10 minutes before layering if guacamole is runny.
  6. Pour the salsa: Gently spread the chunky salsa over the guacamole.
  7. Sprinkle the shredded cheeses: Combine cheddar and Monterey Jack cheeses and sprinkle evenly over the salsa layer.
  8. Add finishing touches: Top with sliced black olives, chopped green onions, and diced tomatoes.
  9. Chill before serving: Cover with plastic wrap and refrigerate for at least 1 hour (ideally 2) to let flavors meld and dip firm up.
  10. Serve: Pair with sturdy tortilla chips and enjoy cold or at room temperature.

Notes

Use fresh lime juice in guacamole to prevent browning. Drain watery salsa to avoid soggy dip. Shred cheese from blocks for better melt and flavor. Chill dip for at least 1 hour before serving for best flavor. Serve with sturdy tortilla chips or veggie sticks. Can be made vegan by substituting sour cream and cheese with dairy-free alternatives and ensuring beans are vegan-friendly.
