Instructions

  1. Mix dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, and salt (about 5 minutes).
  2. Prepare wet ingredients: In a separate bowl, beat the egg, then add milk, melted butter, and vanilla extract. Whisk until smooth (about 3 minutes).
  3. Combine batter: Pour wet ingredients into dry and stir gently until just combined; lumps are okay (about 2 minutes).
  4. Make cinnamon swirl: Mix brown sugar, ground cinnamon, and melted butter until spreadable; add a teaspoon of milk if too thick (about 3 minutes).
  5. Heat skillet: Warm a non-stick pan or griddle over medium heat and lightly grease with butter or oil (about 5 minutes).
  6. Pour pancake batter: Pour about ¼ cup batter onto the pan, shaping into a heart if desired. Immediately pipe or spoon cinnamon swirl onto batter.
  7. Swirl the cinnamon: Use a toothpick or skewer to gently drag through the cinnamon mixture to create a spiral effect (1-2 minutes).
