  • 1 teaspoon instant yeast

  • 2 tablespoons olive oil or melted butter
  • 2 cloves garlic, finely minced (optional)
  • 2 tablespoons fresh cilantro, chopped (optional)

Instructions

  1. Activate the yeast: In a small bowl, combine warm water (⅓ cup/80ml), sugar (1 tsp), and instant yeast (1 tsp). Stir gently and let it sit for 5-7 minutes until foamy.
  2. Mix the dry ingredients: In a large mixing bowl, whisk together the all-purpose flour (2 cups/250g) and salt (1 tsp).
  3. Combine wet and dry: Add the activated yeast mixture, yogurt (½ cup/120g), and olive oil or melted butter (2 tbsp) to the flour mixture. Stir until a shaggy dough forms.
  4. Knead the dough: Transfer the dough to a lightly floured surface and knead for about 8-10 minutes until smooth and elastic. The dough should be slightly tacky but not sticky.
  5. First rise: Place the dough in a lightly oiled bowl, cover with a damp cloth or plastic wrap, and let it rise in a warm spot for 1 hour or until doubled in size.
  6. Divide and shape: Punch down the dough and divide into 6 equal portions. Roll each into a ball, then roll out each ball into a heart shape about ¼ inch (6 mm) thick.
  7. Preheat skillet: Heat a cast iron or non-stick pan over medium-high heat until hot but not smoking.
  8. Cook the naan: Place one heart-shaped dough piece onto the hot pan. Cook for 1-2 minutes until bubbles form and underside is golden with brown spots. Flip and cook the other side for 1-2 minutes.
  9. Add garlic and herbs: While hot, brush cooked naan with melted butter or olive oil and sprinkle with minced garlic and chopped cilantro if using.
  10. Repeat and serve: Cook remaining pieces the same way. Serve warm.

Notes

Keep cooked naan warm by wrapping in a clean kitchen towel. If dough feels tough, let it rest a few extra minutes before rolling. Avoid pressing down on bread while cooking to keep it fluffy. Use dairy-free yogurt and olive oil for a vegan version.
