  • 2 ½ cups (315g) all-purpose flour
  • 1 tbsp baking powder
  • 3 tbsp granulated sugar
  • ½ tsp salt
  • ½ cup (113g) unsalted butter, cold and cubed
  • 3 tbsp fresh herbs (chives, parsley, thyme), finely chopped
  • ¾ cup (180ml) heavy cream, plus extra for brushing
  • 1 large egg, beaten
  • Optional: pinch of freshly ground black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
  2. In a large bowl, whisk together the flour, baking powder, sugar, and salt until evenly combined.
  3. Add the cold, cubed butter to the dry mix. Using a pastry cutter or two forks, cut the butter until the mixture resembles coarse crumbs with some pea-sized bits.
  4. Stir in the finely chopped fresh herbs.
  5. In a separate small bowl, whisk together the heavy cream and beaten egg.
  6. Pour the cream and egg mixture into the flour mixture. Gently fold together with a spatula until just combined. The dough will be slightly sticky—do not overmix.
  7. Turn the dough onto a lightly floured surface. Gently pat it into a 1-inch thick circle about 8 inches wide.
  8. Cut the circle into 8 equal wedges using a sharp knife or pizza cutter. Transfer wedges to the baking sheet, spacing about 1 inch apart.
  9. Brush the tops with a little extra heavy cream.
  10. Bake for 18-22 minutes, or until the tops are golden brown and a toothpick inserted comes out clean.
  11. Remove from oven and transfer scones to a cooling rack. Let cool for at least 10 minutes before serving.

Notes

Keep butter cold to ensure flaky scones. Do not overmix the dough to keep it tender. Chill your baking sheet before baking for a crisper bottom crust. If dough is too wet, add a tablespoon more flour carefully.
