Ingredients

  • 2 cups packed kale (curly or dinosaur)
  • 1 medium cucumber (peeled if waxed)
  • 1 medium green apple (cored, Gala or Granny Smith preferred)
  • 2 medium celery stalks
  • 1 lemon (juiced)
  • 1-inch piece fresh ginger (peeled)
  • 1 cup water or coconut water (240 ml)
  • Optional: small handful fresh parsley

Instructions

  1. Wash and prep your ingredients: rinse kale, celery, parsley, and cucumber under cold water. Remove kale leaves from thick stems.
  2. Chop kale, celery, cucumber, and apple into 1-2 inch chunks. Peel ginger and lemon (if preferred) and cut lemon in half.
  3. Juice the lemon using a citrus juicer or reamer, removing seeds. Set aside.
  4. Add kale, celery, cucumber, green apple, parsley (if using), fresh ginger, and water or coconut water into the blender jar.
  5. Blend starting on low speed, gradually increasing to high. Blend for 1-2 minutes until smooth and creamy with vibrant green color.
  6. Optional: strain the juice through a fine mesh sieve or nut milk bag for a smoother texture, pressing gently to extract juice.
  7. Stir in the fresh lemon juice.
  8. Serve immediately in a chilled glass for maximum freshness and nutrient punch.

Notes

Use organic produce when possible. Remove thick kale stems to reduce bitterness. Blend ginger with other ingredients for balanced flavor. If juice tastes too strong or bitter, add water or a pinch of natural sweetener like raw honey or maple syrup. Prepare ingredients the night before for quick mornings.
