  • 3 ripe avocados (choose ones that yield slightly to gentle pressure)
  • 1 medium tomato, finely diced
  • 1/4 cup finely chopped red onion
  • 12 cloves garlic, minced
  • 1 small jalapeño, seeded and finely chopped (optional)
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime (about 2 tablespoons)
  • Salt to taste (preferably kosher salt)
  • Freshly ground black pepper, to taste
  • 45 medium corn tortillas (yellow or white corn)
  • 2 tablespoons olive oil (or avocado oil)
  • 1 teaspoon kosher salt (for sprinkling after baking)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Stack the tortillas and cut each one into 6-8 wedges, depending on your preferred chip size.
  3. Brush each wedge lightly with olive oil on both sides.
  4. Arrange the wedges in a single layer on your baking sheet. Use parchment paper if desired.
  5. Bake for 10-15 minutes, flipping halfway through, until edges are golden and crispy but not burnt.
  6. Immediately sprinkle kosher salt evenly over the chips while still warm and toss gently to coat.
  7. Cut the avocados in half, remove the pit, and scoop the flesh into a mixing bowl.
  8. Mash the avocado using a fork or potato masher to your preferred consistency.
  9. Add diced tomato, red onion, minced garlic, jalapeño, and cilantro to the bowl and stir gently to combine.
  10. Pour in fresh lime juice and season with salt and pepper. Taste and adjust seasoning as needed.
  11. Transfer guacamole to a serving bowl and serve immediately with the crispy chips.

Notes

Use firm, small-curd avocados for best texture. Avoid over-oiling chips to keep them crispy. Flip chips halfway through baking for even crispiness. Press plastic wrap directly on guacamole surface to prevent browning. Serve guacamole fresh for best flavor and color.
