  • 6 medium fresh carrots, washed and peeled
  • 1-inch piece fresh ginger root, peeled
  • 1 medium fresh lemon, juiced
  • 1 cup (240 ml) cold filtered water
  • 12 teaspoons honey or maple syrup (optional)
  • Ice cubes (optional)

Instructions

  1. Wash and peel about 6 medium carrots. Chop into 1 to 2 inch chunks. Peel and roughly chop a 1-inch piece of fresh ginger.
  2. If using a juicer, feed carrots and ginger through the chute collecting juice in a pitcher. If using a blender, add carrot chunks, ginger, and 1 cup cold filtered water to blender jar. Blend on high for 1 to 2 minutes until smooth.
  3. Optional: Pour blended mixture through a fine mesh strainer or nut milk bag into a bowl or pitcher, pressing gently to extract liquid for smoother juice.
  4. Add juice of one medium lemon to the carrot juice mixture. Stir well. Taste and add 1-2 teaspoons honey or maple syrup if desired.
  5. Serve chilled over ice cubes if preferred. Stir and enjoy immediately for maximum freshness.

Notes

Use organic carrots if possible and keep peel on for extra nutrients. For best ginger flavor, use firm, plump roots without wrinkles. Strain juice if you prefer a smoother texture. Add more water if blender struggles. Adjust lemon and sweetener to taste. Store leftovers in airtight container in fridge up to 24 hours and stir before drinking.
