  • 3 ripe avocados (medium to large, creamy and soft but not mushy)
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 jalapeño pepper, seeded and finely diced (optional)
  • 1 lime, juiced (freshly squeezed)
  • 1/4 cup fresh cilantro, chopped
  • 2 spring onions, thinly sliced
  • Salt to taste (preferably kosher salt)
  • Freshly ground black pepper, a pinch
  • Optional: 1 medium tomato, diced

Instructions

  1. Cut each avocado in half, remove the pit, and scoop the flesh into a medium mixing bowl. Mash gently with a fork or potato masher, leaving some small chunks for texture (about 2-3 minutes).
  2. Finely dice the red onion and jalapeño (if using), mince the garlic, and thinly slice the spring onions and cilantro. Add them directly to the mashed avocado.
  3. Squeeze the juice of one fresh lime over the bowl (about 2 tablespoons or 30 ml).
  4. Sprinkle in about 1/2 teaspoon kosher salt and a pinch of freshly ground black pepper. Stir gently to combine evenly.
  5. If desired, fold in the diced tomato (about 1/2 cup or 75g).
  6. Taste and adjust seasoning with more salt, lime juice, or jalapeño as preferred.
  7. Serve immediately with chips or veggie sticks, or cover tightly with plastic wrap pressed onto the surface and refrigerate for up to 24 hours.

Notes

Use ripe but firm avocados for best texture. Do not over-mash to keep some chunks. Use fresh lime juice to prevent browning. Season gradually and taste as you go. Serve immediately or store with plastic wrap pressed on surface to prevent oxidation.
