A quick and easy parfait featuring creamy full-fat Greek yogurt layered with fresh spring fruits, granola, and toasted nuts, perfect for brunch or a refreshing snack.

  • 2 cups full-fat Greek yogurt (about 480 ml)
  • 2 tablespoons raw or local honey (optional but recommended)
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup blueberries, washed and dried
  • 1 large kiwi, peeled and sliced
  • 1 cup granola (choose your favorite variety)
  • 1/4 cup chopped toasted almonds or walnuts (optional)
  • A handful of fresh mint leaves for garnish
  • 1 teaspoon vanilla extract

Instructions

  1. Prep the Fruit (10 minutes): Wash all your fruit thoroughly. Hull and slice the strawberries, peel and slice the kiwi, and pat the blueberries dry. Keep fruit pieces bite-sized for easy layering and eating.
  2. Mix the Yogurt (5 minutes): In a medium bowl, combine the Greek yogurt with honey and vanilla extract. Stir gently until smooth and creamy.
  3. Toast the Nuts (optional, 5 minutes): If using nuts, toast them lightly in a dry skillet over medium heat until fragrant (about 3-4 minutes). Let cool before adding.
  4. Assemble the Parfait (10 minutes): Spoon a layer of the sweetened yogurt into the bottom of your glass. Add a layer of mixed fruit, then sprinkle a layer of granola. Repeat layers until the glass is nearly full, finishing with a layer of fruit on top. Sprinkle with toasted nuts and garnish with fresh mint leaves.
  5. Chill or Serve Immediately: Serve right away for maximum crunchiness or chill for 30 minutes to let flavors meld.

Use full-fat Greek yogurt for creaminess. Mix honey and vanilla into yogurt for even sweetness. Toast nuts carefully to avoid burning. Drain very juicy fruit to prevent soggy granola.
