Fresh Summer Berry Salad Recipe with Easy Crunchy Poppy Seed Dressing

  • 1 cup fresh strawberries, hulled and halved
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 1 cup fresh blackberries (optional)
  • 4 cups mixed salad greens (baby spinach, arugula, or spring mix)
  • 1/2 cup toasted slivered almonds or pecans
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon poppy seeds
  • 1 teaspoon Dijon mustard
  • 1/4 cup extra virgin olive oil
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Rinse all the berries gently under cold water and pat them dry with paper towels. Hull and halve the strawberries. In a large mixing bowl, combine the strawberries, blueberries, raspberries, blackberries (if using), and the mixed greens. Set aside.
  2. In a small dry skillet over medium heat, toast the slivered almonds or pecans for 3-5 minutes, stirring frequently until golden and fragrant. Remove from heat and allow to cool.
  3. In a medium bowl or mason jar, whisk together the Greek yogurt, honey, apple cider vinegar, Dijon mustard, and poppy seeds. Slowly drizzle in the olive oil while whisking continuously until the dressing is smooth and creamy. Season with salt and pepper to taste. If the dressing feels too thick, add a teaspoon or two of water to reach desired consistency.
  4. Pour the dressing over the berry and greens mixture. Using salad tongs or two large spoons, gently toss everything together until the berries and greens are lightly coated. Be careful not to crush the berries.
  5. Sprinkle the toasted nuts on top just before serving. Serve immediately or chill for 15 minutes if preferred.

Notes

Keep dressing separate if making ahead to avoid soggy greens. Toast nuts carefully to avoid burning. Use fresh, ripe berries for best texture and flavor. For dairy-free, swap Greek yogurt with coconut yogurt and honey with agave syrup. Gently toss salad to avoid crushing berries.
