A refreshing summer salad combining sweet, juicy watermelon with tangy feta cheese, fresh mint, and a light lime dressing. Perfect for quick, easy, and crowd-pleasing summer gatherings.

Ingredients

  • 4 cups (600g) seedless watermelon, cut into 1-inch bite-sized cubes
  • 1 cup (150g) crumbled feta cheese
  • 1/4 cup fresh mint leaves, chopped or torn
  • 1/4 small red onion, thinly sliced (optional)
  • 2 tablespoons extra virgin olive oil
  • Juice of 1 lime (about 2 tablespoons)
  • Pinch of sea salt
  • Freshly ground black pepper, to taste
  • Optional: handful of arugula or baby spinach
  • Optional: sprinkle of toasted pine nuts

Instructions

  1. Prepare the watermelon by cutting it into 1-inch bite-sized cubes. Drain any excess juice to avoid sogginess.
  2. Thinly slice about a quarter of a small red onion. Soak in cold water for 10 minutes and drain if you want to mellow the bite (optional).
  3. In a small bowl, whisk together extra virgin olive oil, fresh lime juice, sea salt, and freshly ground black pepper. Adjust seasoning to taste.
  4. In a large mixing bowl, gently toss the watermelon cubes, crumbled feta, fresh mint leaves, and red onion slices.
  5. Pour the dressing over the salad and toss lightly to combine, being careful not to break the watermelon cubes.
  6. Chill the salad in the refrigerator for about 15 minutes before serving for best flavor (optional).

Notes

Use a sharp knife to cut watermelon cleanly and drain excess juice to avoid sogginess. Toss salad gently to keep watermelon cubes intact. For vegan version, substitute feta with vegan cheese or tofu. Optional to soak red onion slices to mellow flavor. Serve chilled for best taste. Leftovers keep up to 2 days refrigerated; drain excess liquid before serving again.
