  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 8 to 10 mini slider buns (brioche or potato rolls recommended)
  • 8 slices sharp cheddar cheese
  • Fresh lettuce leaves, shredded or small leaf pieces
  • Thinly sliced tomato (preferably vine-ripened or heirloom)
  • Sliced dill pickles
  • 2 tablespoons mayonnaise
  • 1 tablespoon yellow mustard
  • 2 tablespoons softened butter

Instructions

  1. In a large mixing bowl, combine ground beef with garlic powder, onion powder, salt (about 1 teaspoon), and pepper (about ½ teaspoon). Mix gently with your hands without overworking (about 3 minutes).
  2. Divide the beef into 8 to 10 equal portions (about 2 ounces or 60 g each). Roll into balls and flatten into patties about 3 inches wide and ½ inch thick. Make a slight indentation in the center of each patty with your thumb (5 minutes).
  3. Heat a large non-stick or cast iron skillet over medium-high heat. Add a little oil or butter to prevent sticking (about 2 minutes).
  4. Cook patties in the skillet without crowding for 3-4 minutes on the first side until browned. Flip and cook another 2-3 minutes (total 6-8 minutes).
  5. Place a slice of cheddar on each patty during the last minute of cooking. Cover loosely with a lid or foil to melt cheese evenly. Ensure patties reach an internal temperature of 160°F (71°C) (1 minute).
  6. Spread softened butter on the insides of slider buns and toast in a separate pan or under a broiler until golden and slightly crisp (1-2 minutes).
  7. Spread mayonnaise and mustard on the bottom buns. Add lettuce, cheesy beef patties, tomato slices, and pickle slices. Top with the bun tops (5 minutes).
  8. Serve immediately while cheese is melty and buns are soft yet toasted.

Notes

Do not overmix the beef to keep patties juicy and tender. Make a thumb indentation in patties to prevent puffing. Add cheese in the last minute of cooking for perfect melt. Toast buns with butter to prevent sogginess. Let patties rest a minute before assembling to lock in juices.
