  • ⅓ cup (67 g) granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon finely grated lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon gelatin powder
  • 3 tablespoons cold water
  • ½ cup (120 g) full-fat Greek yogurt (or dairy-free coconut yogurt)
  • 2 tablespoons honey

Instructions

  1. Bloom the gelatin: Sprinkle 1 teaspoon gelatin powder over 3 tablespoons cold water in a small bowl. Let sit for 5 minutes until jelly-like.
  2. Heat gelatin gently in microwave for 10-15 seconds or over a double boiler until dissolved but not hot. Set aside to cool slightly.
  3. In a large chilled bowl, whip 1 cup heavy whipping cream with ⅓ cup sugar and 1 teaspoon vanilla extract until soft peaks form (3-4 minutes on medium-high speed).
  4. In another bowl, combine ½ cup Greek yogurt, 2 tablespoons honey, 1 tablespoon lemon zest, and 2 tablespoons lemon juice. Stir until smooth.
  5. Slowly drizzle cooled gelatin into the yogurt mixture, stirring continuously to avoid lumps.
  6. Gently fold the yogurt-gelatin mixture into the whipped cream using a rubber spatula until just combined and no streaks remain.
  7. Spoon mousse into serving glasses or bowls. Cover and refrigerate for at least 2 hours, ideally 3-4 hours, until set.
  8. Before serving, garnish with fresh mint, lemon zest, or seasonal berries.

Notes

Do not overwhip the cream to avoid grainy texture. Bloom gelatin fully before warming gently. Fold ingredients gently to preserve airiness. Chill mousse for at least 2 hours for best texture. For dairy-free version, substitute heavy cream with coconut cream, Greek yogurt with coconut yogurt, and use plant-based gelatin like agar-agar.
