  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (225g) unsalted butter, softened
  • 1 ¾ cups (350g) granulated sugar
  • 3 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup (240ml) buttermilk, room temperature
  • Zest of 2 large lemons
  • ¼ cup (60ml) fresh lemon juice
  • 1 ½ cups (225g) fresh blueberries
  • For the glaze:
  • 1 cup (120g) powdered sugar, sifted
  • 23 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 10-12 cup Bundt pan thoroughly with butter and dust with flour, tapping out excess.
  2. In a large bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. Using an electric mixer, beat softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Beat in eggs one at a time, fully incorporating each before adding the next.
  5. Mix in vanilla extract, lemon zest, and fresh lemon juice.
  6. Reduce mixer speed to low. Alternately add dry ingredients in three parts with buttermilk in two parts, beginning and ending with dry ingredients. Mix just until combined.
  7. Gently fold in fresh blueberries using a rubber spatula to avoid breaking them.
  8. Pour batter into prepared Bundt pan and smooth the top.
  9. Bake for 50-60 minutes, checking at 50 minutes with a toothpick for doneness.
  10. Cool cake in pan on wire rack for 15 minutes, then invert onto rack to cool completely.
  11. Whisk powdered sugar with lemon juice and optional lemon zest to make glaze.
  12. Drizzle glaze over cooled cake and let set for 10-15 minutes before slicing.

Notes

Use room temperature ingredients for best results. Dust blueberries with flour before folding to prevent sinking. Do not overmix batter to keep cake tender. Let cake cool completely before glazing. Oven temperature accuracy is important; use an oven thermometer if possible.
