A warm, gooey baked brie wrapped in flaky puff pastry, drizzled with honey and topped with fresh raspberries, perfect for entertaining and easy to prepare.

  • 1 (8-ounce) wheel of brie cheese, whole and uncut
  • 1 sheet puff pastry (about 8x8 inches), thawed
  • 2 tablespoons honey (preferably raw or wildflower)
  • 1/3 cup fresh raspberries (about 50g), washed and dried
  • 1 large egg, beaten (room temperature, for egg wash)
  • Optional: a few sprigs fresh thyme for garnish
  • Optional: 2 tablespoons chopped toasted nuts (pecans or walnuts)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. On a lightly floured surface, gently roll out the thawed puff pastry sheet to smooth any creases and make it slightly larger—about 9×9 inches.
  3. Place the brie wheel in the center of the puff pastry. Optionally, slice a thin layer off the top rind for a creamier melt.
  4. Drizzle 1 tablespoon of honey over the top of the brie. Scatter the fresh raspberries evenly on top, and if using, sprinkle the toasted nuts and fresh thyme.
  5. Fold the puff pastry edges around the brie, bringing all corners up and pinching them together at the top. Trim any excess dough if needed and press to seal. Use pastry scraps to decorate if desired.
  6. Brush the entire pastry surface with the beaten egg for a golden, glossy finish.
  7. Place the wrapped brie on a baking sheet lined with parchment paper or a silicone baking mat.
  8. Bake for 20-25 minutes, or until the pastry is puffed and golden brown.
  9. Remove from the oven and let rest for 5 minutes to allow the cheese to thicken slightly.
  10. Drizzle the remaining 1 tablespoon of honey over the top just before serving. Garnish with extra fresh raspberries and a sprig of thyme if desired.
  11. Serve warm with crackers, sliced baguette, or apple slices.

Notes

Keep puff pastry cold before wrapping to avoid stickiness. Do not overfill with raspberries or honey to prevent soggy pastry. Tent with foil if pastry browns too quickly. Let the baked brie rest before serving to avoid lava-hot cheese. Egg wash is essential for a golden crust.
