  • 8 to 10 pounds spiral-cut ham, pre-cooked, bone-in recommended
  • 1 cup (200 g) packed brown sugar (dark brown sugar preferred)
  • 1/4 cup (60 ml) Dijon mustard
  • 2 tablespoons (30 ml) whole grain mustard
  • 2 tablespoons (30 ml) apple cider vinegar
  • 2 tablespoons (30 ml) honey
  • 1/2 teaspoon (1.3 g) ground cinnamon
  • Pinch of ground cloves (optional)
  • Freshly ground black pepper, to taste
  • 1/4 cup (60 ml) water (to thin glaze if needed)

Instructions

  1. Preheat your oven to 325°F (163°C) and position the rack in the lower third of the oven.
  2. Remove the spiral-cut ham from packaging and place it flat-side down on the roasting rack. Discard any plastic disk covering the bone.
  3. In a medium bowl, whisk together brown sugar, Dijon mustard, whole grain mustard, apple cider vinegar, honey, ground cinnamon, ground cloves, and black pepper. Add water if the glaze is too thick to brush easily.
  4. Brush about half of the glaze all over the ham surface, getting between slices carefully.
  5. Place the ham uncovered in the oven and bake for 1 hour 15 minutes to 1 hour 30 minutes (about 10-12 minutes per pound), brushing with remaining glaze every 20 minutes.
  6. Watch for caramelization; if edges darken too quickly, tent loosely with foil.
  7. Use a meat thermometer to ensure the internal temperature reaches 140°F (60°C).
  8. Remove the ham from the oven and tent with foil. Let rest for 10-15 minutes to redistribute juices.
  9. Slice along the pre-cut spirals and spoon any extra glaze drippings over the top before serving.

Notes

Brush glaze multiple times during baking for a sticky, caramelized crust. Tent with foil if edges brown too fast. Let ham rest after baking to keep slices juicy. Use a meat thermometer to ensure perfect doneness. Add apple juice or water to the pan if ham looks dry during baking.
