  • 2 lobster tails (about 68 ounces each, thawed if frozen; fresh if possible)
  • 4 tablespoons unsalted butter, softened
  • 3 cloves garlic, finely minced
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon fresh parsley, finely chopped
  • Salt and freshly ground black pepper, to taste
  • Optional: pinch of smoked paprika or cayenne

Instructions

  1. Preheat your oven’s broiler and position the oven rack about 6 inches (15 cm) from the heat source.
  2. Using kitchen shears, carefully cut down the top of the lobster shell lengthwise, stopping just before the tail fan. Pry the shell open slightly and gently lift the lobster meat out, resting it on top of the shell.
  3. In a small bowl, mix together the softened butter, minced garlic, lemon juice, parsley, salt, and pepper (add smoked paprika or cayenne if using). Stir until fully combined.
  4. Brush the lobster meat generously with half of the garlic butter mixture.
  5. Place lobster tails on a baking sheet and slide them under the broiler. Cook for about 8-10 minutes, or until the meat is opaque and lightly browned on the edges.
  6. Halfway through cooking, brush the lobster meat with the remaining garlic butter.
  7. Remove from oven and let rest for 2 minutes.
  8. Serve immediately with lemon wedges and a sprinkle of fresh parsley.
