  • 4 cups (about 300g) fresh broccoli florets, washed and ready to go
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup (60ml) low sodium soy sauce
  • 2 tablespoons (30ml) oyster sauce
  • 1 teaspoon (5ml) sesame oil
  • 1 tablespoon (12g) brown sugar
  • 2 teaspoons (6g) cornstarch mixed with 3 tablespoons (45ml) water to make slurry
  • 2 tablespoons (30ml) vegetable oil for stir-frying
  • Optional: red pepper flakes for heat, sliced green onions for garnish

Instructions

  1. Slice the beef thinly against the grain into strips about 1/4 inch thick. Tip: Freeze beef for 15 minutes beforehand to make slicing easier.
  2. Wash and cut broccoli into bite-sized florets (about 4 cups). Set aside.
  3. In a small bowl, combine soy sauce, oyster sauce, brown sugar, sesame oil, minced garlic, and grated ginger. Stir until sugar dissolves.
  4. In another small bowl, whisk cornstarch with water until smooth to make slurry.
  5. Heat skillet or wok over medium-high heat and add vegetable oil. Let it get hot but not smoking.
  6. Add sliced beef in a single layer (in batches if needed). Sear without stirring for 1 minute, then stir-fry until browned but tender, about 2-3 minutes. Remove beef and set aside.
  7. In the same pan, add more oil if needed, then stir-fry broccoli for 3-4 minutes until bright green and tender-crisp.
  8. Return beef to pan with broccoli. Pour in sauce mixture and stir to coat evenly.
  9. Pour cornstarch slurry into pan while stirring constantly. Cook 1-2 minutes until sauce thickens and becomes glossy.
  10. Taste and adjust seasoning if needed. Garnish with sliced green onions or red pepper flakes if desired. Serve hot.

Notes

Slice beef against the grain for tenderness. Do not overcrowd the pan when searing beef to get a good caramelized crust. Use fresh ginger and garlic for best flavor. If sauce thickens too quickly, add a splash of water to loosen. Leftovers can be refrigerated up to 3 days or frozen up to 2 months. Reheat gently with a splash of water to restore sauce consistency.
