  • 2 tablespoons peanut butter (creamy or chunky)
  • 1 tablespoon chocolate chips (optional)

Instructions

  1. In a microwave-safe mug, combine 4 tablespoons of all-purpose flour, 3 tablespoons of granulated sugar, 2 tablespoons of unsweetened cocoa powder, 1/4 teaspoon baking powder, and a pinch of salt. Stir well to blend and break up any lumps.
  2. Add 3 tablespoons of milk, 2 tablespoons of vegetable oil, and 1/4 teaspoon vanilla extract to the mug. Stir gently until smooth with no visible dry flour.
  3. Drop 2 tablespoons of peanut butter in dollops on top of the batter. Add 1 tablespoon of chocolate chips around it. Swirl the peanut butter slightly into the batter without overmixing.
  4. Microwave on high for 70 to 90 seconds. Start checking at 70 seconds; the cake should rise and look set but still soft to the touch.
  5. Let the mug cake sit for 1-2 minutes to finish setting before enjoying.
